"...hasta que sea asombroso"
Maricarmen Tapas Bar isn’t just a business, it’s a labour of love held together by a small team who care deeply about what they do. We opened our doors with no grand plan, just a shared belief that food brings people together, and that even in uncertain times, a table with good company and honest flavours can feel like home.
The name? It started as a bit of a joke, “¡Hasta luego, Maricarmen!, a phrase made iconic by Belén Esteban and now part of everyday Spanish slang. It stuck because it made us laugh, and because it captured something we love: that mix of humour, warmth, and cheek that lives in kitchens and bars where people feel at ease.
Our team is small. We prep together, clean down together, laugh and panic and try again... together. Some of us have been in hospitality for years; others are figuring it out as we go. We don’t have a manual, just a lot of heart and the hope that people will walk through the door and feel something real.
The food we make is rooted in the Spanish cuisine but shaped by the people in the kitchen, by their memories, their families, the things they love to cook and eat. Every dish has a story, even if we don’t always tell it. And though we serve food, what we’re really offering is warmth, care, and a place to slow down for a moment.
These are strange times to run a small place, but we’re still here, chopping veg, playing music, dancing, setting tables. And if you find yourself here too, know that you’re part of something we’re building day by day, with everything we’ve got.
